Quick and simple Spicy Beer BBQ Chicken Skewers with Avocado Corn and Feta Salsa. This homemade sweet-n-spicy chipotle honey BBQ sauce steals the show and makes these easy chicken skewers completely delicious. The side of salsa adds a crisp, salty bite with lots of fresh summer produce. All together this is the perfect weeknight dinner that comes together in no time and is great for summer grilling.
Ok, one last grilling recipe for you guys before Memorial Day this weekend! I’m not sure about all of you, but I am really, really excited for summer this year. It’s been a long winter and a long spring. So I’m really looking forward to the summer days and nights ahead.
Summer vacations, weekend getaways, dinners cooked on the grill, and drinks on the deck. Yes, laidback-lowkey days…that’s what summer is all about! I think we’re all ready for that. So, with the summer slowly approaching I want to share a quick dinner with plenty of summer flavor and produce.
BBQ chicken was always something my dad made on busy nights in the summer. He’d thaw out some frozen chicken tenderloins and toss them with a bottle of Sweet Baby Rays (the family’s BBQ sauce of choice back in the days). Then he’d fire up the grill, toss on the chicken, and add a side of steamed rice. I don’t remember large varieties of vegetables being added, but asparagus and corn were the usual companions on the grill.
Done and done.
I always think of saucy BBQ chicken as a summer food, which was really the inspiration behind these skewers.
I wanted to do a quick homemade BBQ sauce to add more flavor and ditch the extra ingredients that come along with the bottled stuff. Turns out that with just some pantry staples, you can have a sweet and spicy sauce that’s the easiest to throw together. And yes, so much better than the bottled stuff.
Start with the sauce. I mix together beer, ketchup, honey, chipotle chile, and a few others spices. Then I simmer everything together on the stove until the sauce thickens.
Super simple and quick to do.
When the sauce is ready, I toss some of it in with the cubed chicken. Then I thread the chicken onto the skewers just before grilling. I love using a skewer, but you could easily just grill up chicken pieces like my dad would often do!
You all know me, I couldn’t just give you the chicken. I had to add some sauces and spreads too!
This salsa is the perfect balance of smoky, sweet, spicy, and salty. Grilling the jalapeño is key. It adds a layer of flavor that’s unexpected and delish. The feta adds a nice creamy, salty finish that I LOVE with the BBQ chicken.
For serving, I whip a bit of avocado in a food processor with some lime juice. I then serve the chicken with the salsa, the whipped avocado, and some homemade french fries all on the side. So delish!
The easiest dinner, but one of those meals the entire family will love and so great for summer grilling. Easy, fun, and all-around good…that’s what summer dinners are all about!

LOVE the corn feta salsa. It goes with everything. I serve it under fresh fish a lot. It is my go to recipe, especially in the summer with fresh corn from the farmer’s market.

We made this last night and it was BOMB. So, so delicious. The BBQ sauce is absolutely delightful and so easy to make. (We have a couple folks with sensitive palettes, so we only used a quarter of the chili powder called for and half of the paprika, and it still had a bit of a kick at the end). Don’t skip the whipped avocado with lime juice! Really well done, Tieghan – bravo!

These were delicious. We made these while camping. I made the BBQ sauce and dressing prior and cooked the chicken and corn on the fire. It was so easy to make but felt like restaurant quality in the middle of the woods. This is a keeper for camping and home!

I love all your recipes so much and this one was no exception! My only question is, you mention chives in the recipe when making the corn but there are no chives on the ingredient list. About how much should I add?

The recipe calls for chipotle chili powder, but I could only find chipotle chili pepper at my local Kroger. Are they the same? Both my daughter and I love your recipes.
